Steps to make Chole kulcha:
In a bowl add all-purpose flour, salt sugar, baking soda, baking powder, oil and curd and mix it. Now gradually mix lukewarm water to it and make soft dough. Rest this dough for at least 1 hour.
In a cooker add soaked chole and 3 cups of water and add salt, tea bag, cinnamon stick, cloves and green and one big cardamon to it. Make 6 whistles on medium flame.
In a pan add 3-4 tbspoon of oil and add jeera. When jeera crackeld add kasuri methi and 1 tej patta to it. Now add onion to it saute for half min. Now add ginger garlic paste to it and cook for 2-3 minutes.now in bowl mix all tha masala together.
Now add masala to the pan and stir it half min. Quickely add tomato puree to this and mix all together. Close the lid and cook for 5- 6 min. When oil seprated from the gravy. Add the drained chole and mix it. Now add the left over water to the chole and cook the chole for 15 min on medium flame.
For kulcha take the dough. Use some dry flour and tuck the dough. Now in a rolling pan dust some flour take one portion of dough. Add fresh coriander and black seeds to top and try to role the kulcha. Put the kulcha in a pan and put flame on slow.
Sprinkle some water around the kulcha and cover the pan. Now change the side again sprinkle some water around kulcha and cover the pan. When kulcha slightly cooked add butter to the top and roast the kulcha both the side. Your yummy chole kulcha is ready to serve 😊
