  8. Take 800 grams cold mashed potato

  1. Heat the oil in a frying pan, add the prawns and white ends of the spring onions, season and cook for 2-3 minutes, until prawns turn pink. Add ginger, soy sauce and green parts of spring onion and fry for 1-2 minutes. Remove from heat and cool.
  2. Add prawn mixture, wasabi, lime zest and juice to mashed potato and season. Mix and shape into 8 fishcakes. Dust with flour and put on a baking tray lined with nonstick baking paper. Chill for 20 minutes.
  3. Heat 1cm (1/2 in) oil in large frying pan. Fry the fishcakes for 3-4 minutes on each side, until golden.
