The ingredients needed to make Dahl:
Take Yellow Spilt Peas
Get vegetable oil
Get cumin seeds
Take cinnamon sticks (2 inches long)
Prepare green chilli pepper (can be hot or mild depending on preference)
Prepare medium sized onions
Get garlic cloves
Prepare fresh minced ginger (or 2 teaspoons of powdered ginger)
Prepare fresh minced turmeric (or 1 teaspoon on powdered ginger)
Prepare cardamom pods
Take paprika
Make ready salt
Get medium tomatoes
Take Lemon, juiced
Get Coriander (for garnish)
Steps to make Dahl:
Add 2.5 Litres of water to the Yellow Split peas and boil for 10 minutes. Reduce to simmer and cook for a further 40 minutes. The split peas should now be quite soft.
Dice the onions to make very small pieces. mince the chili pepper and mince the garlic cloves. If using fresh,, mince the ginger and turmeric
Take the cardamom pods and use a mortar and pestle to crush the pods. Take the seeds out and discard the pods as they are not edible. Now crush the seeds into powder. You need about 1 teaspoon of the powder
Heat the oil in a medium skillet over medium heat. Add the cumin seeds and the cinnamon sticks and cook for 60 -120 seconds until fragrant.
Add the onion, green chili, garlic and ginger (if using fresh) and turmeric (if using fresh) and cook for 4 -5 minutes until onions are turning translucent.
Add the turmeric (if dry), ginger (if dry), cardamom, paprika, slat and tomatoes to the pan and cook until the tomatoes start to fall apart (about 2-3 minutes). Discard the cinnamon stick.
Drain the yellow split peas well. Stir in the spiced onion mixture and add lemon juice and some water to make it a bit thinner. Bring to simmer. Taste and add salt if necessary. Now use a normal blender or immersion blender to make the split peas into a thick dahl.
Garnish with coriander leaves and serve
