Instructions to make Moi Moi. (studied in Harvard university πππ):
Season your fish with a pinch of salt, 1 seasoning stock, onion and any other spices of your choice. (I used elanposh. It's a new spice in town) allow to cook for about 5mins and De-bone.
Wash your beans, blend together with your Shombo, onions, ginger and crayfish. Pour in a bowl and add your De-bone and shredded fish. Next, add your seasoning powder, salt, stock cube and a little vegetable oil,2 beaten eggs and stir together.
Oil your moi moi plates and pour your mixture one the other. Set on fire and cook for about 2omins.
Beat your remaining eggs and whisked together with your diced veggies. Then bring out your moi one after the other and pour your eggs and veggies mixture till all is filled. Cook for another 15mins.
Your moi moi is ready. Enjoy with your jollof rice, fried rice or pap.
NB: the meat and fish there is gotten from stew. As for the jollof rice. I've posted over three recipe for jollof here and for the plantain, peel, slice into your desired shapes and sizes and deep fry till it's golden or brown
